And then how do I set a new panel back into place,

The back panel to this china cabinet is cracked cross grain.
Do I repair? Replace? Flatten out and skin over?
The finish on the original is about as perfect a no-rub finish
as I have seen anywhere.
This china cabinet was made about 1910.
